The secret lies in the dough, which, when baked with sourdough, yields a robust knäckebröd with many flavours and a lovely acidity, rich in fibre (23%). A sourdough shell takes considerably longer to ferment, resulting in a nice crispness.
The triangle bread is a round knäckebröd cut into portions, a perfect size for most people. It’s easy to handle and fits well in a bread basket.
