Lingonberry cracker in the form of small mini moose from Knäck & Bräck is a lovely thin knäckebröd baked on organic rye, spelt and emmer wheat flour. The crispbread has as much as 11% whole lingonberries, which gives the bread a slightly sour taste enhancement, perfect for serving with the cheese tray as both the stomach and the eye will love it. When the knäckebröd bakes on coarsely ground rye, you get a lot of healthy dietary fibre, which is essential for our bodies health. The rye, spelt, and emmer wheat flour makes the bread even a little healthier than if baked on conventional wheat flour. Spelt has been cultivated for 8000 years and Emmer is a precursor to spelt grown for 12,000 years. These ancient cereals have a higher content of essential amino acids than today's modern wheat. They also contain antioxidants that strengthen the body's immune system, as well as thiocyanate, which is an endogenous antibiotic. Spelt has a lower GI than regular wheat, which helps you keep your blood sugar level at a more even level.
