Why does knäckebröd easily get soft in the summer?

We are often get asked why knäckebröd becomes soft and how to store your knäckebröd properly. What many people experience when it is hot and humid is that knäckebröd can become soft. It is natural that a knäckebröd will be soft if you have not stored it dry, i.e. well sealed. Compare the properties of a knäckebröd with a regular soft white bread, which is allowed to lie in front a little too long, and you see that these bread will change in different ways. An ordinary white bread contains large amounts of moisture, while a knäckebröd is dry. What happens then is that nature wants to equalize the difference between the content of the bread and its surroundings, which leads to the dry knäckebröd absorbing moisture from the air while the soft white bread emits moisture. The result is that hard bread becomes soft, and the white bread becomes hard if they are allowed to lie in front and not stored correctly.
